Nutmeg Tarts
Ingredients
- Sugar 5 oz
- Butter 5 oz
- Farm fresh eggs 3 pieces
- Wheat Flour 10 oz
- Coarse Salt ¼ teaspoon
- Heavy cream 25 fl oz
- Milk 5 fl oz
- Ground Nutmeg 2 teaspoons
- Brown Sugar 5 oz
- White Beans ½ piece
- Egg white 4 pieces
Step-by-Step Guide
Step 1
Mix the white sugar and softened butter and beat with a mixer until fluffy. Add one egg and beat again. Gradually add the flour and salt and knead the dough. Transfer to a countertop, divide into four parts, and roll each into a circle 5 mm thick. Place the circles into 15 cm diameter and 350 ml volume tart pans, prick with a fork, and refrigerate for one hour.
Step 2
Preheat the oven to 375°F. Line the pans with parchment paper and fill with baking beans, bake for fifteen minutes, then remove the paper and bake for another fifteen minutes.
Step 3
Combine the cream, milk, nutmeg, and vanilla seeds in a saucepan, bring to a boil, and remove from heat. Mix two eggs, brown sugar, and yolks. Add to the warm cream mixture and whisk.
Step 4
Fill the tart shells with the cream and bake for thirty minutes at 300°F. Cool for two hours. Sprinkle with ground nutmeg.
