Nut Tartlets with Ganache and Fig
Ingredients
- Wheat Flour 5 oz
- Hazelnut 0 oz
- Butter 0 oz
- Egg white 1 piece
- Sugar 0 oz
- 10% cream 5 fl oz
- Liquid dark chocolate 5 oz
- Salt a pinch
- Fig 2 pieces
- Honey to taste
Step-by-Step Guide
Step 1
If the hazelnuts are raw, toast them in a preheated oven at 355°F for 8–10 minutes. Remove the skins and grind them in a blender with a little sugar until flour-like. Sift into a deep bowl, add wheat flour, salt, and sugar. Mix well.
Step 2
Melt the butter and pour it into the flour mixture. Add the egg and knead the dough by hand until smooth.
Step 3
Divide the dough in half, form 2 balls, and roll them into discs to fit the tartlet pans. Place the dough in the pans, cover with plastic wrap, and refrigerate for 30 minutes.
Step 4
Bake the crust for about 20 minutes at 355°F until golden brown. Once slightly cooled, remove the crust from the pans and let it cool completely.
Step 5
Meanwhile, prepare the ganache: break the chocolate into pieces, place in a bowl, heat the cream until just below boiling, and pour it over the chocolate. Stir with a spatula until the melting chocolate and cream form a smooth, homogeneous mixture. Pour the cream over the crusts and refrigerate until fully cooled (the ganache should become firm and the surface matte).
Step 6
Wash the figs, dry them, remove the tough top part, and cut into quarters. Place the fig wedges on a sheet of parchment paper and drizzle with honey. Bake at 355°F for 5–8 minutes (depending on the ripeness of the fruit) until the figs become soft. Use the cooled figs to decorate the finished tartlet.
