Ingredients

  • Serviceberries 25 oz
  • Hazelnut 10 oz
  • Sugar 1 cup
  • Butter 5 oz
  • Salt to taste
  • Egg white 2 pieces
  • Wheat Flour 2 cups
  • Citrus Zest Mix 2 teaspoons
  • Vanilla salt 1 teaspoon
  • Cinnamon ½ teaspoon
  • Nutmeg ¼ teaspoon
  • Ground clove a pinch
  • Water 1 teaspoon
  • Egg white 1 piece
  • Powdered Sugar to taste

Step-by-Step Guide

Step 1

Chop the hazelnuts and roast them in a dry skillet, then grind them.

Step 2

Chop the chilled butter with sugar and salt. Add the yolks, zest, and vanilla.

Step 3

In a separate bowl, mix the ground hazelnuts, flour, cinnamon, and cloves. Gradually add the nut-flour mixture to the butter mixture, stirring constantly.

Step 4

Spread the dough over the bottom and sides of a greased springform pan. Roll the remaining dough into a ball, then flatten it into a thick disc. Place the pan with the crust and the disc in the refrigerator for 2 hours. Then evenly distribute the berries over the crust and chill.

Step 5

Preheat the oven to 200°C (392°F).

Step 6

Place the disc between two lightly floured sheets of paper and roll it out into a round crust.

Step 7

Cut the crust into strips 1-1.5 cm wide. Place them in the freezer for 15 minutes or until firm. Then carefully arrange the strips over the berries in a lattice pattern; trim the edges.

Step 8

Lightly beat the egg white with water and brush the lattice with the mixture. Place the pie on a baking sheet and bake for 15 minutes. Then reduce the oven temperature to 180°C (356°F) and bake for another 25 minutes or until the crust is golden.

Step 9

Remove the cooled pie from the pan and dust with powdered sugar.
