Description
If you don't have brown sugar at home, you can use regular sugar for sprinkling, adding a pinch of cinnamon to it.
Ingredients
- Wheat Flour 5 oz
- Butter 5 oz
- Brown Sugar 5 oz
- Chopped almonds 5 oz
- Ground Cinnamon 1 tablespoon
- Egg white 1 piece
- Vanilla salt 0 oz
- Salt a pinch
Step-by-Step Guide
Step 1
In a dry skillet, toast the almonds for 2–3 minutes until lightly golden. Chop the nuts in a blender briefly, so that the almond pieces are of varying sizes; this is necessary for an uneven texture in the cookies.
Step 2
Sift the flour together with the vanilla sugar and cinnamon. Cut the butter into pieces and blend it with 50 grams of brown sugar and a pinch of salt. Gradually add the flour mixture and chopped nuts to the blender, mixing each time until smooth.
Step 3
If the dough crumbles while mixing, you can add 2 teaspoons of cold liquid (such as water or milk). Place the prepared dough in the refrigerator for 1 hour.
Step 4
On a sheet of parchment paper, roll out the chilled dough with a rolling pin in all directions until it is fairly thin, about 1.5 mm. Transfer the parchment with the dough onto a baking tray and place it in the refrigerator for 5–10 minutes.
Step 5
Before placing the baking sheet in the preheated oven at 390°F, brush the dough with egg white and sprinkle with the remaining brown sugar. Use a round pizza cutter to cut the sheet of dough into squares and bake for 15 minutes.
