Ingredients

  • Egg white 2 pieces
  • Pistachios 5 oz
  • Honey 5 oz
  • Sugar 15 oz
  • Light Molasses 0 oz

Step-by-Step Guide

Step 1

Toast the pistachios in a dry skillet.

Step 2

If the nuts are very large, they can be chopped with a knife.

Step 3

In a deep saucepan, pour in 135 ml of water and add the sugar.

Step 4

Place on high heat and bring the mixture to a boil. Boil the syrup for 12 minutes from the moment it starts boiling. Add the honey and molasses and cook until the syrup reaches 285°F.

Step 5

Whip the cooled egg whites with a mixer until stiff peaks form. Then, while continuing to whip, slowly pour in the hot syrup in a thin stream.

Step 6

Continue to whip the mixture until it becomes glossy and cools to room temperature. Add the nuts and mix well.

Step 7

Line a mold with plastic wrap.

Step 8

Spread the mixture evenly and smooth it out with a spatula. Cover with plastic wrap.

Step 9

Cool the nougat with nuts to room temperature and place it in the refrigerator for 1 hour.

Step 10

Cut the nougat with a knife dipped in hot water.
