Nougat with Almonds in Chocolate
Ingredients
- Honey 5 oz
- Sugar 15 oz
- Egg white 2 pieces
- Chopped almonds 10 oz
- Chocolate 10 oz
Step-by-Step Guide
Step 1
Place honey and sugar in a saucepan and add 50 ml of water. Put it on the heat and bring to a boil over medium heat. Cook for about 10 minutes.
Step 2
The syrup should pass the soft ball test. To do this, drop a bit of syrup into a cup of cold water – the drop should solidify but remain soft. If you have a candy thermometer, it's even easier – it should read 340°F.
Step 3
While the syrup is cooking, whip the egg whites until stiff peaks form. Start pouring the finished syrup in a thin stream into the whipped egg whites, continuing to whip. Whip until the mixture thickens. WHIP FOR A LONG TIME UNTIL THE BEATERS START TO GET STUCK IN THE MIXTURE!
Step 4
Add the nuts to the egg whites and mix. Line a shallow baking tray or dish with parchment paper or foil and grease it well with vegetable oil. Spread the egg white-nut mixture on it and smooth it out.
Step 5
Place it in the refrigerator and let it set for 1 hour. Cut the set nougat into small pieces.
Step 6
Melt the chocolate in a water bath or in the microwave. Dip the pieces of nougat in chocolate and place them on a tray lined with parchment paper.
Step 7
Put it in the refrigerator and let it set for 30 minutes.
