Nougat Glacé
Ingredients
- Sugar 5 oz
- Date honey 5 oz
- Nuts 0 oz
- Dried Turkey 0 oz
- 10% cream 10 fl oz
- Egg white 3 pieces
Step-by-Step Guide
Step 1
Melt the sugar into caramel and add the nuts, quickly stir everything for two minutes and spread it out on a silicone mat to cool.
Step 2
Once the nougat cools, break it into pieces about 1x1 cm.
Step 3
Whip the cream to soft peaks and place it in the refrigerator to await its moment.
Step 4
Put the honey on low heat and bring it to a full boil, add instant coffee (it won't fully dissolve, don't worry, it will be fine). Let it simmer for 5 minutes.
Step 5
Meanwhile, whip the egg whites to stiff peaks.
Step 6
Lower the mixer speed and slowly pour the honey into the egg whites.
Step 7
Once all the honey is in the egg whites, increase the mixer speed and continue whipping until fully cooled.
Step 8
Gently fold the meringue into the cream. Add the pieces of nougat and chopped dried fruits.
Step 9
Divide into molds (or one large one) and place in the freezer overnight.
