Norwegian Cod Soup
Ingredients
- Onion 2 pieces
- Cod 0 lbs
- Carrot 3 pieces
- Garlic 3 cloves
- Wheat Flour 2 tablespoons
- Butter 0 oz
- Potato 1 piece
- Dry White Wine 5 fl oz
- 10% cream 0 fl oz
- Chopped Sage Leaves 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Rinse the fish and cut it into pieces 3–4 cm wide. Cover with cold water and bring to a boil. Cook for 10 minutes, periodically skimming off the foam.
Step 2
Remove the fish with a slotted spoon and place it on a plate to cool.
Step 3
Peel the onion and carrot; cut the onion crosswise halfway through, and slice the carrot into sticks 4 cm long. Add to the broth, cover with a lid, and cook for 20 minutes.
Step 4
Melt the butter, add the flour, and sauté, stirring constantly, for 3 minutes. Add the minced garlic and sauté for 1 minute, then remove from heat.
Step 5
Carefully remove the bones from the fish, trying not to break the pieces too much.
Step 6
Remove the cooked vegetables from the pot and blend them with a small amount of broth until smooth. Add the puree to the broth, along with the fish.
Step 7
Add the sautéed flour with garlic to the broth. Bring the soup to a boil.
Step 8
Pour in the wine.
Step 9
Blanch the tomato in boiling water, then cool it under cold water, peel it, and dice it. Add the tomato to the soup, season with salt and pepper, and cook for 10 minutes.
Step 10
Remove the soup from heat, then slowly pour in the cream while stirring constantly. Let it steep for 10 minutes.
Step 11
Serve with herbs. Pair with dry white wine.
