Description
Traditionally, the cheese is consumed on bread, pancakes, and waffles. It is used as an ingredient in fondue and sauces. It can also be served as a dessert with tea. After cooling, the cheese should be stored in an airtight container.

Step-by-Step Guide
Step 1
You need homemade whey from freshly made cottage cheese. Do not use old whey, or the cheese will turn sour. Reduce the whey from 1.5 liters to 0.5 liters (about an hour). Occasionally scrape the bottom with a wooden spatula to prevent the whey from burning.
Step 2
Add the cream. Ideally, you should use farm-fresh cream; if not available, use cream with a fat content of 35%.
Step 3
Cook until the mixture thickens completely, and use a potato masher to break up any lumps.
Step 4
Transfer to a small pan. When the mixture starts to form a ball, transfer it to a mold (preferably silicone) and let it sit overnight.
