Description

If you don't have wheat sprouts, fiber, or flaxseed flour — don't despair! These are not the most important ingredients, and you can easily do without them. As for the choice of nuts and dried fruits — it's purely a matter of personal preference. I usually make a mix: nuts: walnuts, cashews, hazelnuts; dried fruits: apricots, prunes, raisins, dates. An alternative version of this nutritious sweet bread: the dough base remains the same; exclude honey, dried fruits, and zest from the recipe; add finely chopped bacon, grated cheese, and herbs. Under no circumstances should you cut the bread while it's still warm! Give it time to rest.

  • Baking Powder 1½ teaspoons
  • Wheat Flour 10 oz
  • Coarsely Ground Rye Flour 10 oz
  • Flaxseeds 0 oz
  • Peanut Sprouts 0 oz
  • 7 Grain Flakes 0 oz
  • Fiber 2 tablespoons
  • Kefir 20 fl oz
  • Dijon Mustard 3 tablespoons
  • Salt 2 teaspoons
  • Activated Baking Soda 1 tablespoon
  • Raw cane sugar 1 tablespoon
  • Turmeric 1 teaspoon
  • Grated Ginger Root 1 tablespoon
  • Ground Nutmeg a pinch
  • Nuts 5 oz
  • Dried Turkey 5 oz
  • Honey 3 tablespoons
  • Toasted Sesame 0 oz
  • Whole egg 1 piece
  • Milk 2 tablespoons
  • Citrus Zest Mix 0 oz
  • Orange zest 10 teaspoons

Step-by-Step Guide

Step 1

Preheat the oven to 390°F. Place non-stick baking paper on the baking sheet and sprinkle it with flour (specifically the area where the bread will be placed; otherwise, the flour will burn and smoke).

Step 2

Combine all dry ingredients, except for the baking soda and baking powder, in a large deep bowl. The following components should be included: wheat flour / rye flour / flaxseed flour / wheat sprouts / 7-grain flakes / fiber / salt / cane sugar / turmeric / ground ginger / ground nutmeg.

Step 3

Add mustard to the kefir and mix. Then add the baking soda and baking powder, stirring until a frothy mixture forms.

Step 4

Add the kefir mixture to the bowl. Chop the nuts and dried fruits, and grate the lemon and orange zest finely. Add these ingredients and honey to the bowl.

Step 5

Mix by hand until a uniform consistency is achieved (the dough will be very sticky!). Sprinkle flour on top of the dough, turn it over, and sprinkle flour underneath. Divide into several parts. Shape into loaves.

Step 6

Place on a flour-dusted cushion on the baking sheet.

Step 7

Bake in the oven for 25–30 minutes, until the bread sounds hollow when tapped.

Step 8

Separate the egg yolk from the white. Whisk the yolk with the milk until smooth.

Step 9

5 minutes before the bread is done, brush it with the yolk and milk mixture, and sprinkle with sesame seeds. Bake until a crispy golden crust forms.

Step 10

Cool on a wire rack (for at least 30 minutes).
