No-Bake Strawberry Cheesecake
Ingredients
- Cottage cheese 10 oz
- Cookie 5 oz
- Meyer Lemon Juice 2 teaspoons
- Powdered Sugar 5 oz
- Gelatin 2 tablespoons
- Chestnut puree 5 oz
- Heavy cream 5 fl oz
- Butter 0 oz
Step-by-Step Guide
Step 1
Crush the cookies and mix with melted butter. Line a 20 cm springform pan with parchment paper. Press the buttery crumbs into the bottom of the pan, compact well, and place in the refrigerator.
Step 2
Dissolve the gelatin in lemon juice and 2 tablespoons of water, and heat in a water bath until it dissolves.
Step 3
Beat the cottage cheese with powdered sugar. Fold in the dissolved gelatin and strawberry puree, and mix well. Whip the cream to stiff peaks and fold into the mixture.
Step 4
Spread the cream over the cookie base and refrigerate the cheesecake for 4 hours to set. Decorate the dessert with strawberries and mint leaves.
