
No-Bake Cheesecake with Summer Berries

Description
This cheesecake doesn't need baking, it is served cold and is perfect for hot summer days.
Ingredients
- Graham Crackers 15 pieces
- Butter 0 oz
- Mascarpone Cheese Unagrande 10 oz
- Semi-soft cream cheese 10 oz
- Heavy cream 15 fl oz
- Sugar 5 oz
- Gelatin 0 oz
- Fresh Berries 10 oz
Step-by-Step Guide
Step 1
Combine the crackers and softened butter in a food processor. Take a 24 cm diameter springform pan and evenly distribute the mixture from the crackers to form the crust.
Step 2
Then whip the cream with sugar until stiff peaks form and add the mascarpone and cream cheese.
Step 3
Dissolve the gelatin according to the instructions (I use one packet weighing 14 g), let it cool, and add it to the cheese mixture. Mix well, pour over the crust, and place in the freezer overnight.
Step 4
Remove the cheesecake 20 minutes before serving and decorate with any fresh berries.
