No-Bake Cheesecake Soufflé
Ingredients
- Semi-soft cream cheese 20 oz
- Cream (40%) 5 fl oz
- Sugar 5 oz
- Gelatin 0 oz
- Butter 5 oz
- Yubileynoye Cookies 10 oz
Step-by-Step Guide
Step 1
For the cheesecake base, finely crumble the cookies (by hand or using a blender), melt the butter. Mix the cookies with the butter, press firmly into a 20–25 cm diameter mold, and place in the refrigerator.
Step 2
Soak the gelatin in cold water for 15 minutes (as per instructions), then squeeze out the gelatin sheets and bring to a boil over low heat. Set aside to cool.
Step 3
Whip the cream with the sugar until thick, then mix this with the cream cheese and add the cooled gelatin. Carefully pour over the cookie base and refrigerate for 4 hours.
