No-Bake Cake with Fruit Leather
Ingredients
- Cottage cheese 5 oz
- Mascarpone Cheese Unagrande 5 oz
- Sugar ½ cup
- Vanilla salt 0 oz
- Caramel Syrup 2 tablespoons
- Fruit Leather 15 oz
- Pastry decorations to taste
- Fruit Marmalade to taste
Step-by-Step Guide
Step 1
Take the apple fruit leather, it should be brown in color and have a bread-like texture (that's why it substitutes the sponge cake component so well). I used a brand from Belev. Cut it into rectangular pieces about 0.8–1 cm thick and lay them on a large flat cake plate (you can line it with foil to prevent sticking). I managed to get 8 pieces based on the size of my plate.
Step 2
Next, take a pack of cottage cheese and mascarpone. Use the cottage cheese you like; I used medium-fat. Place the pack of cottage cheese and the mascarpone in a bowl, add sugar, vanilla sugar, and caramel syrup (you can also use sweetened condensed milk instead of syrup). Mix everything thoroughly. You will get a beautiful, very thick creamy mass. Spread it in a layer of 0.5–1 cm on top of the layer of fruit leather.
Step 3
Again, cut the fruit leather and repeat the actions as in the first step, but place the pieces in a different direction so that the seams do not align.
Step 4
Add a layer of the remaining cheese-cottage cheese mixture and create a smooth surface with a knife.
Step 5
Take your favorite jelly candies and sprinkles and decorate the cake artistically. You can also use your favorite nuts, candied fruits, berries, candies—whatever your heart desires. If the filling turned out to be too liquid, you can place it in the refrigerator for half an hour before serving.
