Ingredients
- Cottage cheese 20 oz
- Raspberries 20 oz
- Gelatin 0 oz
- Jubilee cookies 10 oz
- Butter 5 oz
- Vanilla Sugar 0 oz
- Sugar 5 oz
- Sour Cream 5 oz
- Water 10 fl oz
Step-by-Step Guide
Step 1
In the first bowl, pour 20 g of gelatin and cover with water; in the second bowl, pour 10 g of gelatin and also cover with water.
Step 2
Crush the cookies with room temperature butter into crumbs in a blender, place the crumbs in a mold lined with parchment paper (if no paper is available, simply grease the mold with vegetable oil) and put in the refrigerator for 10-15 minutes.
Step 3
Place the cottage cheese, vanilla sugar, 130 g of sugar, sour cream, and 400 g of raspberries (the remaining 100 g will be needed for the jelly) in a blender; mix well and add the swollen gelatin (20 g). Remove the mold with crumbs from the refrigerator and pour the cottage cheese mixture over the crumbs, then return to the refrigerator for 30 minutes.
Step 4
Place the remaining berries in a saucepan, cover with water, and put on the heat. Wait for it to boil and leave on the heat for 10 minutes. Afterward, remove from heat and let cool; when cool, add 10 g of gelatin. Remove the mold from the refrigerator and pour this syrup over the cottage cheese mixture. Put the cake in the refrigerator for 6 hours to allow the gelatin to set.
