All ingredients should be at room temperature.
Ingredients
- Egg white 3 pieces
- Semi-soft cream cheese 20 oz
- Heavy cream 5 fl oz
- Vanilla extract 1 teaspoon
- Powdered Sugar 5 oz
- "Jubilee Cookies" 5 oz
Step-by-Step Guide
Step 1
Crush the cookies into crumbs, add melted butter, and mix.
Step 2
Press the mixture into the bottom and sides of a 21–22 cm springform pan.
Step 3
Place in a preheated oven at 320°F for 10 minutes. Remove and let cool.
Step 4
Beat the cream cheese with powdered sugar until smooth and homogenous.
Step 5
Gradually add the heavy cream, eggs, and vanilla. Be careful not to overbeat the mixture—if it becomes too aerated, the cheesecake may puff up and crack during baking.
Step 6
Pour the cheese mixture into the pan.
Step 7
Wrap the pan in a double layer of foil to prevent water from seeping in, place it in a larger pan, and fill the larger pan with water until it reaches halfway up the sides of the cheesecake pan. Bake in a preheated oven at 320°F for 1 hour and 20 minutes.
Step 8
After this time, turn off the oven, slightly open the door, and leave it for another hour. After that, remove the cheesecake and refrigerate for at least 4 hours, preferably overnight.
Step 9
Before serving, run a knife along the edges of the pan, remove the sides, and transfer the cheesecake to a plate. Decorate as desired.
