New Year's Meringue
Ingredients
- Egg white 4 pieces
- Sugar 10 oz
- Matcha 0 oz
- Pastry decorations to taste
Step-by-Step Guide
Step 1
Place the egg whites in a bowl, add all the sugar. Set the bowl over a water bath and, heating over low heat while constantly stirring, bring to the point where the sugar dissolves. The mixture should not heat above 110°F.
Step 2
Remove the bowl from the water bath and place it on the table. Using a mixer on high speed, whip the egg whites until stiff peaks form. If you scoop some mixture with a spoon, turn it upside down, and the egg whites do not fall — the mixture is whipped well enough.
Step 3
Add food coloring or matcha tea and whip again until the mixture is evenly colored.
Step 4
Transfer the egg whites into a piping bag fitted with a star tip and pipe meringues in the shape of Christmas trees on a baking sheet lined with parchment paper. Decorate with sprinkles.
Step 5
Place the baking sheet in a preheated oven at 100–230°F and dry for 1.5–2 hours. If the oven is heating too strongly, slightly open the door.
