New Year's Creamy Panna Cotta with Spices
Ingredients
- Dark rum 4 tablespoons
- Light Raisins, Seedless 4 tablespoons
- Gelatin 6 pieces
- Cream (40%) 0 qt
- Raw cane sugar 5 oz
- Grated Ginger Root 1 teaspoon
- Ground Nutmeg ¼ teaspoon
- Ground Cinnamon 1 teaspoon
- Ground clove 1 teaspoon
- Red Currant to taste
Step-by-Step Guide
Step 1
Transfer the raisins to a small bowl, pour the rum over them, cover with plastic wrap, and let sit for 30 minutes.
Step 2
Meanwhile, soak the gelatin sheets in cold water in a bowl until soft. Drain the water and squeeze out the excess moisture with your hands.
Step 3
In a saucepan, combine the cream, sugar, and spices. Bring to a boil, reduce the heat, and simmer for 2-3 minutes, stirring until the sugar dissolves.
Step 4
Remove the cream mixture from the heat and stir in the gelatin until fully dissolved.
Step 5
Then add the raisins, without the rum.
Step 6
Pour the mixture into small molds, cool, then cover with plastic wrap and refrigerate for about 2 hours until set.
Step 7
Before serving, hold each mold in hot water and invert onto plates. Garnish with sprigs of red currants on top.
