  • Orange zest to taste
  • Sugar 5 oz
  • Water to taste
  • 70% Dark Chocolate 1 piece

Step-by-Step Guide

Step 1

Peel the oranges and cut the peel into even strips about 5–6 cm long.

Step 2

Dip the cut peel into boiling water for 3 minutes, then drain. Repeat this 3 times, constantly changing the boiling water.

Step 3

In a small saucepan, mix the sugar and water (the amount of sugar should weigh the same as the initial peel; the amount of water should be the same as the peel).

Step 4

Bring the syrup to a boil, add the peel, and simmer on low heat for 30 minutes.

Step 5

Drain and place the peel on a rack. Leave to dry overnight.

Step 6

In the morning, melt the chocolate in a double boiler.

Step 7

Using a fork, dip the peel in the chocolate and place it on a rack or parchment paper. Allow to set.
