Nettle Puree Soup
Ingredients
- Nettle 20 oz
- Wheat Flour 8 tablespoons
- Butter 5 oz
Step-by-Step Guide
Step 1
Place the sorted and washed nettle in salted boiling water and cook until soft. Then pass it through a meat grinder or strain it through a sieve.
Step 2
Sauté the flour with butter and dilute it with the nettle broth to a consistency similar to sour cream. Then mix it with the pureed nettle and cook the mixture for 5–10 minutes.
Step 3
Before serving, season the soup with butter. Croutons can be served separately.
