Nectarines in spiced wine
Ingredients
- Nectarines 1½ kg
- Raw cane sugar 20 oz
- Dry White Wine 5 fl oz
- Ground Cinnamon ½ spoons
- Grated Ginger Root ¼ spoons
- Clove 4 pieces
- Meyer Lemon Juice 0 fl oz
- Water 15 fl oz
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Submerge the nectarines in boiling water for 2 minutes, then transfer them to ice water.
Step 3
Remove the skin and pits from the nectarines.
Step 4
Cook a syrup made from sugar and water with ginger, cinnamon, and cloves.
Step 5
Submerge the nectarines in the hot syrup, bring to a boil, turn off the heat, and let them steep in the syrup for 3–4 hours.
Step 6
Drain the syrup into a bowl and set aside. Pour the wine and lemon juice into the pot with the nectarines. Bring to a boil and then turn off the heat.
Step 7
Remove the nectarines and transfer them to sterilized jars.
Step 8
Combine the broth with the syrup, bring to a boil, and pour it into the jars up to the brim.
Step 9
Seal the jars, turn them upside down, and let them cool this way.
Step 10
Return the jars to an upright position and store in a cool place.
