Napoleon Cake with Layers

Ingredients

  • Wheat Flour 3½ cups
  • Water 2 cups
  • Margarine 10 oz
  • Vinegar essence 1 tablespoon
  • Sugar 2 cups
  • Farm fresh eggs 5 pieces
  • Milk 3 cups
  • Corn Starch 4 teaspoons
  • Butter 10 oz

Step-by-Step Guide

Step 1

Pour the flour into a large bowl. Grate the margarine on a coarse grater over the flour and mix thoroughly. Combine the eggs with cold boiled water and vinegar. Mix the eggs with water and the flour with margarine.

Step 2

Divide the dough into 10–11 equal parts. Place in the refrigerator for 30 minutes.

Step 3

Meanwhile, prepare the custard. Beat the eggs. Add sugar while continuing to beat.

Step 4

Combine the milk with the egg-sugar mixture. Bring to a boil, stirring constantly.

Step 5

Dissolve the cornstarch in a small amount of milk. Gradually pour the dissolved cornstarch into the boiling egg-milk mixture. Stir and remove from heat. The mixture should thicken. Allow to cool.

Step 6

Add the softened butter to the cooled mixture. Whip until smooth. This is our cream. Place in the refrigerator.

Step 7

Roll out each piece of chilled dough to the diameter of your chosen pan. I used a springform pan with a diameter of 25 cm. While rolling out, be sure to sprinkle the dough and the surface with flour constantly.

Step 8

Wrap the rolled-out dough around a rolling pin. Transfer to a greased and floured pan. Prick the dough with a fork. Keep the trimmed pieces and bake them, as we will use them for decorating the cake later.

Step 9

Bake all the layers this way. Baking temperature is 355°F, baking time for one layer is about 10 minutes.

Step 10

Place the trimmed baked dough pieces in a deep dish and crumble them into large crumbs. This will be the topping for the cake.

Step 11

Spread cream on the first layer (5–6 tablespoons of cream per layer).

Step 12

Layer all the baked layers on top of each other, spreading cream between each layer.

Step 13

Let the cake soak for 1 hour. During the soaking process, the cake will settle in height. Sprinkle the cake with crumbs on top and on the sides.

Step 14

Place in the refrigerator for 2–3 hours (preferably overnight).
