- Whole egg 1 piece

Step-by-Step Guide
Step 1
Roll out the pastry and place it in a round tart pan with low edges. Prick several times with a fork, line with parchment paper, and fill with peas or beans. Chill for 30 minutes.
Step 2
Meanwhile, preheat the oven to 375°F. Place the pastry in the oven and bake for 15 minutes. Remove from the oven and take off the paper with peas.
Step 3
In the meantime, heat olive oil in a pan over medium heat and sauté the finely chopped onion until soft. Remove from heat and transfer to a bowl.
Step 4
In the pan, add the thinly sliced mushrooms and sauté for a while until all the liquid evaporates. Remove from heat and add the finely chopped herbs. Season with salt and pepper. Transfer to the bowl with the onion.
Step 5
In the bowl, whisk the egg and yolk and mix in the crème fraîche. Season with salt and pepper and incorporate into the mushrooms.
Step 6
Spread the filling over the pastry and sprinkle with grated cheese on top. Bake for about 20 minutes until the filling is slightly puffed and golden brown. Serve hot, warm, or cold.
