Ingredients
- Dried Chinese mushrooms 0 oz
- Olive Oil 0 fl oz
- Fresh Mushrooms 20 oz
- Garlic 2 cloves
- Spanish onions 1 head
- Thyme 2 sprigs
- Mushroom seasoning 0 qt
- Parsley 0 oz
- Mascarpone Cheese Unagrande 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place the dried porcini mushrooms in a small bowl, cover with boiling water just enough to submerge them, and let them soak.
Step 2
Heat a large frying pan, then add the olive oil and chopped fresh mushrooms. Stir quickly for 1 minute, then add the garlic, onion, and thyme leaves, and season lightly with salt.
Step 3
After about 1 minute, moisture will start to release from the mushrooms; at this point, add half of the chopped porcini mushrooms, leaving the rest whole. Strain the soaking liquid to remove any particles and add it to the pan. Continue cooking for about 20 minutes until most of the moisture has evaporated.
Step 4
Season to taste and add the broth. Bring to a boil and cook for about 20 minutes.
Step 5
Blend the soup until smooth, add the chopped parsley and mascarpone, and season thoroughly with salt and pepper to taste.
