Mushroom soup with caramelized onions and fennel
Ingredients
- Olive Oil 5 tablespoons
- Onion 3 pieces
- Fennel 1 head
- Garlic 2 cloves
- Mushroom broth 8 cups
- Champignon Mushrooms 15 oz
- Dry White Wine ¼ cup
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat 4 tablespoons of olive oil in a large pot over medium heat.
Step 2
Add the onion and fennel and sauté, stirring, until soft, about 1 hour (the onion and fennel should caramelize).
Step 3
Add the garlic and sauté, stirring, for about 2 minutes until fragrant. Pour in the broth and bring to a boil over medium heat.
Step 4
Meanwhile, in a large skillet, heat 1 tablespoon of olive oil.
Step 5
Add the mushrooms and sauté, stirring, until golden brown (about 5 minutes).
Step 6
Add the wine and sauté until the wine has partially evaporated (about 5 minutes).
Step 7
Transfer all the contents of the skillet to the soup and cook, stirring, for about 5 minutes. Season with salt and pepper, ladle into bowls, and garnish with fennel fronds.
