Mushroom Solyanka
Ingredients
- Spiced Tomato Juice 10 fl oz
- Salt to taste
- Vegetable Oil 6 tablespoons
- Ground Black Pepper to taste
- Sugar to taste
- Onion 2 heads
- Carrot 1 piece
- White Cabbage 20 oz
- Fresh Mushrooms 15 oz
Step-by-Step Guide
Step 1
In a deep skillet, heat the vegetable oil. Sauté the finely chopped onion over low heat, stirring constantly, until lightly golden. Add the chopped champignons. Season with salt and pepper. Cook until done and transfer to a bowl.
Step 2
Finely chop the carrot and onion. Sauté in the same skillet with vegetable oil over low heat until softened.
Step 3
Add the glass of tomato juice to the cooked vegetables. Continue to simmer over low heat, stirring constantly. Add half a teaspoon of salt and a teaspoon of sugar, along with pepper. Cook until a thick consistency is achieved.
Step 4
Finely shred the cabbage. Add it to the carrot, onion, and tomato mixture. Stir well. Cover and simmer over low heat, stirring occasionally. Add salt and sugar.
Step 5
Add the mushrooms to the cooked cabbage and mix well. Simmer for another 3 minutes.
