Ingredients
- Butter 5 oz
- Wheat Flour 5 oz
- Chicken Egg 1 piece
- Salt ½ teaspoon
- Ground Nutmeg ⅓ teaspoon
- Onion 1 head
- Grated Pecorino Pepato Cheese 2 tablespoons
- Morels 15 oz
- Cream 5 fl oz
- Herbs to taste
Step-by-Step Guide
Step 1
For the dough, chop the butter with a knife and mix it with the flour, break in 1 egg, add salt, pepper, nutmeg, and grated cheese. Knead and refrigerate for 1 hour.
Step 2
For the filling, sauté the onion and mushrooms. When the liquid evaporates, add salt, pepper, herbs, 1 tablespoon of flour, and pour in the cream, heating for 3–5 minutes, stirring until slightly thickened.
Step 3
Place the dough in a greased mold, create edges, smooth it out, add the filling, sprinkle with a little more grated cheese, and bake for 40 minutes.
