Mushroom Pie for Mushroom Lovers
Ingredients
- Champignon Mushrooms 5 lbs
- Dijon Mustard 2 tablespoons
- Fresh rosemary 2 teaspoons
- Shortcrust Pastry 1 piece
- Canned Mushroom Soup 1 can
Step-by-Step Guide
Step 1
Spray a large skillet with cooking spray (oil substitute) and heat over medium heat.
Step 2
Add 900 g of champignon mushrooms and cook for 10-12 minutes or until the mushrooms are soft.
Step 3
Add the remaining 500 g of mushrooms and cook for another 10-15 minutes or until the skillet is dry and the mushrooms are browned.
Step 4
Carefully stir in ½ cup of water and continue cooking until the liquid evaporates.
Step 5
Remove the skillet from heat and stir in the concentrated soup, mustard, rosemary, and season with salt and pepper to taste if desired.
Step 6
Let it cool.
Step 7
Preheat the oven to 220°C (428°F) and place the pastry (22 cm) on a baking sheet.
Step 8
Spread the mushroom mixture over the pastry.
Step 9
Bake for 15 minutes, then reduce the heat to 180°C (356°F) and bake for another 45 minutes or until the pie is light brown. Let cool for 10 minutes before serving.
