Mushroom Cream Soup with Wine
Ingredients
- 33% Cream 5 fl oz
- Butter 5 oz
- Celery stalk 6 pieces
- Shallot 3 pieces
- Onion ½ head
- Garlic 3 cloves
- Fresh Mushrooms 15 oz
- Dry White Wine 5 fl oz
- Muscat Wine 5 fl oz
- Chicken Broth 0 qt
Step-by-Step Guide
Step 1
Melt the butter in a large pot and add finely chopped celery, thinly sliced mushrooms, finely chopped shallots, finely chopped onion, and minced garlic. Sauté for 15 minutes until the onion becomes soft.
Step 2
Add both wines and cook for about 15 minutes until all the liquid evaporates and starts to glaze.
Step 3
Add the broth, bring to a boil, reduce the heat, and simmer for another 10 minutes until the mushrooms are tender.
Step 4
Add the cream, salt, and pepper. Transfer to a blender and puree until smooth. Pour into small bowls and serve.
