Mushroom Cream Soup
Ingredients
- Fresh Mushrooms 15 oz
- Onion 1 head
- Garlic 1 clove
- Vegetable Oil 2 tablespoons
- Chicken Broth 15 fl oz
- 10% cream 5 fl oz
- Wheat Flour 2 tablespoons
- Salt ½ teaspoon
- Ground Black Pepper a pinch
- Nutmeg a pinch
- Croutons to taste
- Parsley to taste
Step-by-Step Guide
Step 1
Wash and chop the mushrooms.
Step 2
Dice the onion and finely chop the garlic.
Step 3
Sauté the onion and garlic in vegetable oil, add the mushrooms, and cook until the mushrooms are done.
Step 4
In a saucepan, toast the flour, stirring with a spatula, pour in the broth, bring to a boil, add the onion and mushrooms, salt, and spices.
Step 5
Stir and bring to a boil.
Step 6
Blend until smooth, pour in 100 ml of cream, and return the saucepan to the stove.
Step 7
Bring to the desired consistency without boiling.
Step 8
Add croutons and chopped parsley to taste and serve.
