Description
The first pureed soups were invented in the East, where they were enjoyed cold in the heat. However, their popularity spread due to French chefs, who turned the preparation of cream soups into an art form. For a classic mushroom cream soup, button mushrooms are used, and the flavors are enhanced with pepper, nutmeg, cream, and white wine.
Ingredients
- Champignons 10 oz
- Onion 1 head
- Garlic 1 clove
- Butter 0 oz
- Olive Oil 0 fl oz
- Wheat Flour 1 tablespoon
- Dry White Wine 0 fl oz
- Chicken Broth 25 fl oz
- Cream 10 fl oz
- Nutmeg to taste
- Salt to taste
- Ground Black Pepper to taste
- Parsley to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
In a saucepan, heat the butter and olive oil. Sauté the onion, sliced thinly, until it becomes translucent.

Add the minced garlic and sauté, stirring, for another minute.

Add the mushrooms, chopped randomly, and cook, stirring, until they release their moisture.

Then add the flour and mix well.

Add the wine and let it evaporate for a minute, then pour in the broth, bring to a boil, and simmer for 15 minutes.

Blend the soup until smooth.

Then add the cream.
Step 9
Add salt, pepper, and nutmeg to taste.

Serve garnished with chopped parsley.
