Mushroom and Spinach Soup
Ingredients
- Morels 5 oz
- Onion 1 head
- Whole egg 1 piece
- Chicken Broth 0.7 cups
- Butter 1 tablespoon
- Wheat Flour 1 tablespoon
- Garlic 1 clove
- Cream 4 tablespoons
- Spinach 5 oz
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Finely chop the mushrooms, onion, spinach, and garlic, add the butter and mix in a deep glass pot. Heat in the microwave on maximum power for 6–8 minutes covered. Add the flour and mix.
Step 2
Combine the broth and spices and pour into the pot. Cook for another 3–5 minutes, covered, until it boils.
Step 3
Dilute the egg yolk with the cream, pour into the soup, and heat for 1–2 minutes.
