Mushroom and Chicken Risotto
Ingredients
- Butter 0 oz
- Onion 1 head
- Arborio rice 20 oz
- Dry martini 5 fl oz
- Lemon 1 piece
- Chicken Broth 0 qt
- Chicken fillet 20 oz
- Garlic 4 cloves
- Olive Oil 2 tablespoons
- Fresh Mushrooms 10 oz
- Herbs to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Finely chop the onion and sauté it in butter until golden brown. Add the rice and stir, sautéing for 1 minute until the rice becomes translucent.
Step 2
Pour in the vermouth and cook until the liquid evaporates.
Step 3
Gradually add hot broth to the rice, adding lemon zest.
Step 4
Season the chicken and unpeeled garlic cloves with salt and pepper, pour in olive oil, and fry until cooked. Add the chopped mushrooms, herbs, and sauté for another 5 minutes.
Step 5
While the chicken is cooking, continue adding broth to the rice. Season the rice to taste.
Step 6
Serve the rice on plates, topped with chicken and mushrooms.
