Mousse with Raspberry Sauce

Ingredients
- Egg white 1 piece
- Meyer Lemon Juice 0 fl oz
- Powdered Sugar 70 tablespoons
- Citrus Zest Mix 1 piece
- Semi-soft cream cheese 0 oz
- Raspberry leaves 20 oz
Step-by-Step Guide
Step 1
Separate the yolk from the white. We will need the white. Add 50 grams of powdered sugar and mix. Place over a water bath and whisk with a whisk or mixer until foam forms. Remove from heat, add the zest of 1 lemon, and continue whisking for 2 minutes until the mixture cools.
Step 2
Add the cottage cheese, divide into bowls, and place in the refrigerator.
Step 3
Take about 250–300 grams of raspberries (or any other berry), add lemon juice and the remaining powdered sugar, and puree using a blender. Strain through a sieve.
Step 4
Spread the puree on top of the mousse, decorate with the remaining berries, and place in the refrigerator. Serve after 30 minutes.
