Moroccan Lentil Soup

Ingredients

  • Lentils 2 cups
  • Vegetable Oil 4 tablespoons
  • Turnips 4 pieces
  • Onion 1 piece
  • Garlic 4 cloves
  • Celery salt 4 stalks
  • Bay leaf to taste
  • Mild Chili Spice to taste
  • Ground clove to taste
  • Toasted Cumin Seeds to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Bring 3 liters of water to a boil in a pot.

Step 2

Grate the carrots on a coarse grater and add them to the boiling water. Add the bay leaf. Cook over medium heat for 10 minutes.

Step 3

Meanwhile, sauté the finely chopped onion in vegetable oil for about 4 minutes, then add the minced garlic for another 2 minutes, followed by the chopped celery. After a couple of minutes, add freshly ground allspice, cumin, and chili pepper. Season with salt to taste. Continue cooking over low heat for about 5 minutes.

Step 4

Add 2 cups of lentils (previously rinsed with cold water) to the carrot broth. Cook for 20 minutes over medium heat.

Step 5

Now add the sautéed onion/garlic/celery mixture to the soup. Cook for another 20 minutes over low heat with the lid on. Season with salt to taste.

Step 6

Done :) Serve with sour cream. Enjoy your meal.
