Moroccan Chickpea Soup
Ingredients
- Olive Oil 1 tablespoon
- Onion 1 head
- Celery stalk 2 stalks
- Ground Cumin 2 teaspoons
- Vegetable Broth 20 fl oz
- Canned tomatoes 15 oz
- Canned chickpeas 15 oz
- Frozen fava beans 5 oz
- Lemon Zest 1 tablespoon
- Lemon Juice 1 tablespoon
- Chopped Parsley 0 oz
- Corn tortillas 2 pieces
Step-by-Step Guide
Step 1
Heat the oil in a large skillet and sauté the onion and celery for 10 minutes until softened, stirring frequently.
Step 2
Add the cumin and sauté for another minute.
Step 3
Increase the heat, then add the broth, tomatoes, chickpeas, and black pepper. Cook for 8 minutes.
Step 4
Add the fava beans and lemon juice, cook for another 2 minutes. Season to taste, then top with lemon zest and chopped parsley.
Step 5
Serve with tortillas.
