Ingredients

  • Rooster 20 oz
  • Parsley 2 pieces
  • Carrot 2 pieces
  • Onion 1 piece
  • Water 5 qt
  • Kvass sediment 5 fl oz
  • Green peppercorns to taste
  • Bay leaf to taste
  • Parsley to taste
  • Lovage 1 bunch
  • Egg white 3 pieces
  • Wheat Flour 10 oz
  • Olive Oil 1 tablespoon
  • Mild Chili Spice 1 piece

Step-by-Step Guide

Step 1

Cut the rooster into portion-sized pieces. Pour water into a pot. Cook the broth for 2 hours (cooking time may vary depending on the age of the bird), skimming off the foam, on the very lowest heat, avoiding a vigorous boil.

Step 2

Prepare homemade noodles from the yolks, olive oil, and flour (the amount may vary). The dough should be firm. Gather into a ball, wrap in plastic wrap, and refrigerate for 30 minutes. Roll out thinly and cut into noodles. Leave to dry.

Step 3

20 minutes before the broth is ready, add 1 onion with the skin on. Cut the carrot and parsley root, and the onion. Add salt to the broth to taste. Toss in the vegetables and cook until tender.

Step 4

Boil the noodles separately (1-2 minutes). Drain in a sieve and rinse. Add to the soup and bring to a boil.

Step 5

Pour in the kvass and add the chopped lovage. Bring to a boil again.

Step 6

Serve with parsley.
