Mint Soup

Description
Fish sauce is quite salty, and if you're using store-bought broth or bouillon cubes, those are also salty. So be careful with the salt to avoid overdoing it.
Ingredients
- Chicken Broth 1½ l
- King Prawns 8 pieces
- Peppermint leaves 5 oz
- Fish Oil 1 tablespoon
- Chicken Egg 4 pieces
- Sugar 1 tablespoon
- Lime 1 piece
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Bring the chicken broth to a boil, add the peeled shrimp, pour in a tablespoon of fish sauce, sprinkle in the sugar, and simmer for five minutes.
Step 2
Tear the mint leaves, chop them roughly, and add them to the pot with the shrimp and broth. Stir well and immediately remove from heat. Add the lightly beaten eggs and whisk them in the pot until they curdle. Season with salt if necessary, and add pepper to taste.
Step 3
When serving the soup into bowls, you can squeeze a quarter of a lime into each one.
