Step 1
In a saucepan, bring 2 liters of water to a boil, add the mint leaves, and let them sit for 30 seconds. Drain and quickly transfer to ice water. Drain again and squeeze out the excess water.
Step 2
Transfer the mint leaves to a blender and add the simple syrup. Blend until smooth.
Step 3
Transfer the mixture to an ice cream maker or container and freeze, stirring occasionally.
