Mint Pea Soup

Ingredients

  • Shallots 2 heads
  • Mini Potatoes 1 piece
  • Garlic ½ clove
  • Vegetable Broth 10 fl oz
  • Frozen Green Peas 5 oz
  • Mint 1 tablespoon
  • Sugar a pinch
  • Lemon Juice 1 teaspoon

Step-by-Step Guide

Step 1

Combine chopped shallots, 1 peeled and diced mini potato, ½ clove of garlic, and 225 ml of vegetable broth in a pot.

Step 2

Bring to a boil, reduce heat, and simmer until the potato is soft.

Step 3

Add 75 g of frozen peas and cook on low heat for another 5 minutes.

Step 4

Add 1 tablespoon of chopped mint, a pinch of sugar, and lemon juice. Pour into a food processor and blend until smooth.

Step 5

Add salt to taste.
