Ingredients

  • Frozen green bean pods 2 glasses
  • Blanched frozen corn 1½ glasses
  • Water 1 glass
  • Onion 1 head
  • Coconut Milk 1 can
  • Fresh Mint 1 bunch
  • Lemon ½ pieces
  • Olive Oil to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Place the frozen peas and corn in a pot to thaw and simmer with a small amount of water and olive oil. Chop the onion and sauté it in a skillet until it becomes soft. Add the cooked onion to the pot with the peas and corn. After adding a cup of water and two cups of coconut milk, bring the soup to a boil and then turn off the heat.

Step 2

Place fresh mint leaves in a pot, squeeze the juice from half a lemon, and season with salt and pepper. Blend all the ingredients until smooth. Pour the cream soup into bowls and garnish with mint leaves or green onions.
