Mint Cookies
Ingredients
- Sugar 0 oz
- Milk 30 fl oz
- Activated Baking Soda 1 teaspoon
- Farm fresh eggs 7 pieces
- Mint Leaves 1 tablespoon
Step-by-Step Guide
Step 1
Bring 1,200 g of sugar and 720 ml of milk to a boil. Turn off the heat. Add flour as for pancakes. Let it cool for 1 hour. Then add 1 teaspoon of baking soda, 1 tablespoon of mint extract (available at pharmacies), and 7 eggs, mix well and pour into the dough. Mix everything and add more flour. Make a dough that can be rolled out.
Step 2
Roll out a large sheet about 1 cm thick (you can make it thinner — the cookies rise well) and cut out circles using a glass. Place them on a lightly greased baking sheet and put them in the oven. The cookies bake very quickly. They are ready when they are slightly browned. Do not let them brown too much, or they will be dry.
Step 3
After baking, let them cool and coat them in icing.
Step 4
For the icing, boil 720 g of sugar and 240 ml of milk for 7 minutes. Use while hot.
