Mint Biscotti
Ingredients
- Butter 5 oz
- Sugar ¾ cup
- Farm fresh eggs 3 pieces
- Wheat Flour 3¼ cups
- Baking Powder 1 teaspoon
- Mint Leaves 2 teaspoons
- Salt ¼ teaspoon
- Mini Chocolate Chips 5 oz
- Mint Caramel 10 oz
- Margarine 2 tablespoons
Step-by-Step Guide
Step 1
In a large bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, then the mint extract. In another bowl, mix the flour, baking powder, and salt. Fold in 1 cup of crushed mint caramel. Combine both mixtures and mix well — the dough will be stiff.
Step 2
Divide the dough in half and roll into 2 logs. Place on a clean baking sheet and bake at 180°C (350°F) for 25–30 minutes.
Step 3
Cool for 15 minutes, transfer to a cutting board, and slice diagonally into thin pieces. Place on the baking sheet and return to the oven for another 12–15 minutes. Transfer to a wire rack to cool.
Step 4
In a bowl, melt the chocolate with the margarine in the microwave or over a double boiler.
Step 5
Drizzle the melted chocolate over the biscotti and sprinkle with the remaining crushed caramel.
