Mini Puff Pastry Pies with Ham
Ingredients
- Serrano Chili 5 oz
- Pork fat 0 oz
- Dry White Wine 5 fl oz
- Butter 0 oz
- Wheat Flour 10 oz
- Salt to taste
- Vegetable Oil 15 fl oz
Step-by-Step Guide
Step 1
Pour the wine into a saucepan and add 120 ml of water, butter, and fat. Heat slowly until the fat melts. When the mixture is close to boiling, remove the saucepan from the heat, sift in the flour, add a pinch of salt, and mix well with a wooden spatula.
Step 2
Place the dough on a floured surface and knead until it becomes soft and elastic. Then roll the dough into a ball, cover with a towel, and let it rest for 2 hours.
Step 3
Place the dough on a floured surface and roll it out to a thickness of about 3 mm. Cut out circles using a glass, gather the scraps of dough, roll them out again, and make a few more circles. Finely chop the ham.
Step 4
On one half of each circle, place a heaping teaspoon of filling and pinch the edges well, then shape the pies into crescents.
Step 5
Heat the oil in a deep skillet or pot to 180–375°F. Carefully drop the pies into the oil with a spoon and fry for 6–8 minutes until they are golden brown. Place them on paper towels. Serve immediately.
