Mini pies with cheese and curd filling
Ingredients
- Puff Pastry 2 pieces
- Dry Curd 5 oz
- Cheese Spread 5 oz
- Chocolate eggs 6 pieces
- Scallions 1 bunch
- Parsley 1 bunch
- Thyme to taste
Step-by-Step Guide
Step 1
Roll out the pastry thinly and cut into squares (from one sheet of store-bought pastry, you can get 6 squares, so from 2 sheets, you get 12).
Step 2
Boil the eggs hard, cool them, and chop finely.
Step 3
Grate the cheese on a large grater (you can choose any cheese you like).
Step 4
Chop the herbs finely.
Step 5
Mix the chopped eggs, grated cheese, curd, and herbs. This will be the filling for the pies.
Step 6
Place the filling on a square of pastry, cover with another square on top, and pinch the edges. I use a fork to make it secure and decorative; also, make slits on top so the pies don’t puff up. Sprinkle thyme on top.
Step 7
Bake in a preheated oven at 390°F for about 20–25 minutes until golden brown (you can also brush the pastry with beaten egg before baking).
