Ingredients

  • Beans 5 oz
  • Salad Potatoes 4 pieces
  • Turnips 2 pieces
  • Leek 2 pieces
  • Celery salt 2 pieces
  • Courgette 2 pieces
  • Water 0 qt
  • Olive Oil 4 tablespoons
  • Tomatoes 2 pieces
  • Pasta (corkscrew) 5 oz
  • Pesto 2 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Grated Pecorino Pepato Cheese 0 oz

Step-by-Step Guide

Step 1

Soak the beans overnight.

Step 2

Place the beans in a pot, cover with water. Bring to a boil, drain the water. Cover the beans with cold water, bring to a boil, and cook for 15 minutes. Drain the water and set the beans aside.

Step 3

Peel and chop the vegetables, except for the tomatoes, into strips.

Step 4

Bring the water to a boil, add the beans and vegetables. Add olive oil, bring to a boil, cover, and simmer for 30 minutes.

Step 5

Add the tomatoes, peeled and seeded, and cook for another 10 minutes.

Step 6

Add the pasta to the soup. Cook until done.

Step 7

Mix the pesto with a small amount of broth and pour it back into the soup.

Step 8

Drizzle with olive oil, add pepper, and grated Parmesan.
