Description

You can use any other canned fruits instead of apricots, and instead of cognac, you can use Calvados, whiskey, schnapps, rum, or liqueur. The amount of alcohol can be adjusted to taste.

  • Corn Starch 0 oz
  • 10% cream 5 fl oz
  • Butter 0 oz
  • Vanilla extract 0 fl oz
  • Apricot Jam 5 fl oz
  • Cognac 0 fl oz
  • Milk 15 fl oz
  • Meyer Lemon Juice 0 fl oz

Step-by-Step Guide

Step 1

Combine the sugar, cornstarch, and salt in a saucepan with the milk and cream, stirring well and bringing to a boil over medium heat while continuously stirring.

Step 2

Once boiling, cook the pudding for another minute, then remove from heat, add the butter and vanilla to the saucepan, and stir.

Step 3

Pour the mixture into dessert cups or glasses, cool, and refrigerate for one and a half hours.

Step 4

Meanwhile, finely chop the apricots, mix with the cognac and lemon juice.

Step 5

Before serving, spoon the apricot mixture over the pudding.
