Milk Soup with Leeks
Ingredients
- Olive Oil 2 tablespoons
- Leek 4 pieces
- Salad Potatoes 5 pieces
- Milk 15 fl oz
- Bouillon cube 1 piece
- Salt to taste
Step-by-Step Guide
Step 1
Wash the leeks and slice them. Peel the potatoes and cut them into large pieces.
Step 2
Heat the olive oil in a large pot, add the leeks, and cook over low heat, stirring, for 5 minutes until the leeks are soft but not yet changing color. Pour in 1.5 liters of water, add the potatoes, and season with salt. Bring to a boil, reduce the heat, and let it simmer for 1 hour. Then remove the pot from the heat, let it cool slightly, and blend the soup.
Step 3
Pour the soup into a clean pot, crumble the bouillon cube, and add the hot milk. Serve hot.
