
Mexican Milk Dessert Chongos Zamoranos

Description
When thinking of Mexican cuisine, burritos and tortillas might come to mind, but desserts are often overlooked. Here’s one of them — chongos zamoranos, or spiced curd. It’s incredibly simple to prepare: milk is curdled with lemon, simmered for a couple of hours with spices to achieve a pleasant amber color, and then separated into curds and whey.
Ingredients
- Milk 0 qt
- Sugar 5 oz
- Brown Sugar 0 oz
- Cinnamon 3 pieces
- Lemon 1 piece
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Place the milk on the heat.
Step 3
Add sugar.
Step 4
Add brown sugar.
Step 5
Add cinnamon and heat until the sugar dissolves, being careful not to bring it to a boil.
Step 6
Add the juice of one lemon.
Step 7
Stir and leave on low heat for 2 hours. The milk should curdle and take on an amber color.
Step 8
Strain the chongos through a sieve.
Step 9
Remove the cinnamon sticks.
Step 10
Serve.
