
Mexican Lime Pie

Description
Key lime (Mexican lime) can be substituted with regular lime.
Ingredients
- Butter 5 oz
- Cookie 10 oz
- Sugar 5 tablespoons
- Lime Juice 5 fl oz
- Egg white 4 pieces
- Condensed Milk 1 can
- Cream 1½ cups
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
For the crust, crush the cookies in a blender, add melted butter and 3 tablespoons of sugar. Spread the mixture into a 22 cm round baking pan and press it down evenly on the bottom and sides of the pan with your fingers. Bake the crust for about 8 minutes. Remove the crust from the oven and let it cool to room temperature.
Step 3
For the filling, beat the lime juice, egg yolks, and condensed milk in a large bowl with a mixer.
Step 4
Pour the mixture into the cooled crust and cover it carefully with plastic wrap, ensuring the wrap does not touch the surface of the filling. Place the pie in the refrigerator for 6 hours or overnight.
Step 5
Just before serving, whip the cream with 2 tablespoons of sugar in a well-chilled bowl. Spread the whipped cream evenly over the pie.
